Step 1: Place firelighters onto the grill

Ingredients: Rump cap Chilli flakes (optional) BQQ sauce (any type is good) and the Meat Rub

What you need to Prep the meat

Step 2: Cut the fat, make sure the fat is even (approximately 1 cm thick)

Step 1: Take the meat out of the cryovacking

Step 2: Wash the meat thoroughly under cold water

Now its time to finish getting the weber ready and start cooking

As shown the charcoal has now completely ashed over

After taking the grill off, make sure the charcoal baskets are against the side before filling the baskets with hot charcoal. The gap in the middle is for a drip tray

Place the meat directly above the drip tray Make sure the meat is fat facing up Now pop lid on and leave to cook

First Check After 60minutes

Beef should be cooked to over 60 degrees, so this is not properly cooked yet.

Second Check After 80minutes This is now cooked, take of the weber

Place the meat on the meat board using tongs

Now rub BBQ sauce around the outside of the meat and cover in foil

Cover in foil and let sit for 10-15mins

Now its time to start cutting Cut against the grain instead of with the grain of the meat as shown
